  • 2 zucchini squash (sliced thin)
  • 45 tomatoes (sliced)
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup shredded Parmesan cheese
  • 2 tablespoons butter (melted)
  • 3/4 cup fine bread crumbs
  • 2 teaspoons garlic powder
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • salt and pepper

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×9 baking dish.
  2. In a mixing bowl, combine cheeses with garlic powder, herbs, salt, and pepper; set aside.
  3. Layer zucchini in the baking dish followed by cheese mixture and sliced tomatoes; repeat until all ingredients are used.
  4. Mix melted butter with bread crumbs and sprinkle on top of the casserole.
  5. Cover with foil and bake for 25 minutes; then uncover and bake for an additional 20 minutes until golden.
