  • 240ml dairy-free milk
  • 1 teaspoon apple cider vinegar
  • 210g self-raising flour
  • 50g cocoa powder
  • 100g caster sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 60ml sunflower oil
  • 210g dairy-free block butter (for frosting)
  • 200g icing sugar
  • 20ml aquafaba (chickpea brine)
  • Ground Oreo crumbs for decoration

Instructions

  1. Preheat your oven to 175°C (350°F) and line a muffin tin with cupcake liners.
  2. Combine dairy-free milk and apple cider vinegar in a bowl; let it sit for 5 minutes.
  3. In another bowl, whisk together self-raising flour, cocoa powder, caster sugar, baking powder, and bicarbonate of soda.
  4. Mix sunflower oil into the curdled milk mixture and then combine it with the dry ingredients; stir gently until just mixed.
  5. Spoon batter into muffin tins and bake for 20-25 minutes or until a toothpick comes out clean. Cool on a rack.
  6. For frosting, beat together dairy-free butter and icing sugar before adding aquafaba until smooth.
  7. Frost cooled cupcakes and decorate with ground Oreo crumbs, white chocolate buttons for eyes, and half an Oreo as wings.
