  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 vanilla bean, split and seeds scraped
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter; press into cupcake liners.
  3. Beat cream cheese and sugar until smooth; mix in eggs one at a time. Add sour cream, heavy cream, vanilla seeds, and extract.
  4. Divide batter among liners and bake for 20-25 minutes until slightly jiggly in the center. Cool to room temperature then refrigerate for at least 2 hours.
  5. Before serving, sprinkle sugar on top and use a kitchen torch to caramelize until golden.
