  • 1/2 cup quick-cooking oatmeal
  • 6 ounces butterscotch chips
  • 1 cup confectioners' sugar
  • 1/4 cup creamy peanut butter
  • 4 tablespoons milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a mixing bowl, cream together the butter, granulated sugar, brown sugar, and peanut butter until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, mix the flour, baking soda, and salt. Gradually add this to the wet ingredients until just combined.
  5. Fold in the quick-cooking oatmeal and butterscotch chips evenly.
  6. Spread the batter into the prepared pan and bake for 20-25 minutes until edges are lightly browned.
  7. While baking, prepare the glaze by mixing confectioners' sugar, peanut butter, and milk until smooth.
