  • 1/2 cup dry quinoa
  • 3/4 cup water
  • 23 cups chopped/sliced tomatoes
  • 15 oz can chickpeas (drained and rinsed)
  • 1/4 cup chopped green onion
  • 1/4 cup fresh lime juice (from about 2 limes)
  • 2 tablespoons avocado oil
  • 1 clove garlic (minced)
  • Fresh parsley (chopped)
  • Ground cumin
  • Sea salt
  • Black pepper

Instructions

  1. Rinse quinoa in a mesh strainer to remove bitterness. In a small pot over medium heat, lightly toast the quinoa for a few minutes. Add water and bring to a boil. Reduce heat to low and simmer (covered) for 12-13 minutes until fluffy.
  2. While quinoa cooks, prepare your vegetables by chopping tomatoes and green onions.
  3. Whisk together avocado oil, lime juice, minced garlic, parsley, cumin, salt, and pepper to create the dressing.
  4. Once quinoa is cooked and cooled slightly, combine it with tomatoes, chickpeas, green onion, and half of the dressing. Toss well and add remaining dressing as desired.
