  • 1 cup dark brown sugar (packed)
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1 1/4 cup evaporated milk
  • 1 tablespoon vanilla extract
  • 1 egg (for topping)
  • 1 tablespoon milk
  • whipped cream

Instructions

  1. Preheat your oven to 400°F (200°C). Boil or bake sweet potatoes until tender; allow to cool and peel.
  2. In a mixing bowl, combine flour, salt, and sugar. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water and lemon juice until dough forms; wrap in plastic wrap and refrigerate for 30 minutes.
  3. Mash cooked sweet potatoes in a large bowl. Mix in softened butter, dark brown sugar, eggs, spices, salt, evaporated milk, and vanilla until combined.
  4. Roll out chilled dough and fit into a pie dish. Pour filling into crust.
