  • 3 pounds strawberries (washed and hulled)
  • 3/4 cup sugar
  • 3/4 cup honey
  • 2 tsp vanilla extract
  • 1 tsp bottled lemon juice
  • 1/4 tsp salt

Instructions

  1. Prepare your boiling water canner by heating four half-pint jars in simmering water.
  2. In a food processor, puree the washed strawberries until smooth.
  3. In a deep pot over medium heat, combine strawberry puree with sugar, honey, lemon juice, vanilla extract, and salt. Bring to a boil while stirring frequently.
  4. Lower the heat and simmer for 60–90 minutes until thickened.
  5. Fill hot jars with the mixture, leaving about 1/4 inch headspace. Remove air bubbles and clean the rims.
  6. Seal jars with lids and process in boiling water for 10 minutes.
  7. Allow jars to cool undisturbed for 12–24 hours before checking seals.
