  • 0.3 ounces sugar-free strawberry Jell-O
  • 4 egg whites
  • ⅓ cup canola oil
  • 1 cup frozen unsweetened strawberries (thawed)
  • ½ cup water
  • ⅓ cup butter (softened)
  • 2 ⅓ cups powdered sugar

Instructions

  1. Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine the cake mix and strawberry Jell-O mix. Add egg whites and canola oil; beat until blended.
  3. Mash the thawed strawberries in a small bowl, reserving 3 tablespoons for frosting. Mix the remaining berries and water into the batter.
  4. Pour batter into prepared pans and bake for 20-25 minutes until a toothpick comes out clean.
  5. Cool cakes in pans for about 10 minutes before transferring them to a wire rack to cool completely.
  6. For frosting, beat softened butter with reserved strawberries, gradually adding powdered sugar until fluffy.
