  • cup homogenized milk

  • cup dark brown sugar
  • eggs, room temperature
  • teaspoons pure vanilla extract
  • cups unbleached all-purpose flour

  • teaspoon kosher salt
  • sea salt flakes
  • cup butter (for sauce)
  • cups brown sugar (for sauce)
  • cup 35% cream (for sauce)
  • teaspoon kosher salt (for sauce)
  • whipped cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly butter an 11 x 8-inch casserole dish.
  2. In a small bowl, combine chopped dates with baking soda. Scald homogenized milk in a saucepan; pour over the dates and let sit for 15 minutes.
  3. In another bowl, whisk together flour, baking powder, and salt. In a food processor, blend eggs, dark brown sugar, butter, and vanilla until mixed. Gradually add dry ingredients and then the date mixture; blend until smooth.
  4. Pour batter into the prepared dish and bake for about 30 minutes or until set.
  5. For the caramel sauce, melt butter in a saucepan; mix in brown sugar and salt until dissolved. Add cream and simmer until thickened.
  6. Once baked, poke holes in the pudding and pour one-third of the caramel sauce over it. Let soak for 15 minutes before serving warm with whipped cream.
