  • 4 cups water
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • parsley flakes (fresh or dried)

Instructions

  1. Preheat your oven to 385°F (195°C) and line a baking sheet with parchment paper.
  2. Wash the mini potatoes thoroughly under cold water and set aside to dry.
  3. In a bowl with cold water and 2 tablespoons of lemon juice, carve skull faces into each potato, then place them in the lemon water.
  4. In another bowl, mix olive oil, the remaining tablespoon of lemon juice, salt, onion powder, garlic powder, paprika, and black pepper until combined.
  5. Drain the carved potatoes and toss them in the seasoning mixture until well-coated.
  6. Arrange the seasoned skull-faced potatoes on the baking sheet face side up and bake for about 30 minutes until golden brown.
  7. Garnish with parsley flakes if desired and serve warm.
