  • 6 large eggs
  • 2 tbsp mayonnaise
  • 1 tbsp spicy brown mustard
  • 3 drops red food dye (or beet juice)
  • Salt & pepper to taste
  • 12 medium cocktail olives (with pimentos)
  • 3 slices white bread (or 12 rice crackers)

Instructions

  1. Boil the eggs in a pot of water for 20 minutes. Transfer to cold water and peel.
  2. Slice eggs in half and remove yolks. Strain yolks into a bowl, then mix with mayonnaise, mustard, salt, pepper, and red food dye.
  3. If using bread, cut into circles and toast until crispy.
  4. Fill egg halves with yolk mixture; place olive slices on top.
  5. Serve on toasted bread or crackers.
