  • 2 cups all-purpose flour (sifted)
  • 3/4 cup black cocoa powder (sifted)
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 eggs (room temperature)
  • 1 cup buttermilk (room temperature)
  • 1 cup hot coffee
  • 1/2 cup canola oil
  • 8 oz cream cheese (softened)
  • 3 cups powdered sugar (sifted)
  • Fresh blackberries for decoration

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
  2. In a bowl, sift together flour, black cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, whisk eggs, buttermilk, hot coffee, canola oil, and vanilla until smooth.
  4. Combine wet ingredients with dry ingredients until just mixed. Avoid overmixing.
  5. Pour batter into prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  6. Let cakes cool in pans for 10 minutes before transferring to a cooling rack.
  7. For blackberry compote: simmer fresh blackberries with sugar, lemon juice, zest, water, and cornstarch until thickened.
  8. For frosting: beat cream cheese and butter; gradually add powdered sugar and black cocoa powder until smooth.
  9. Once cooled, layer the cakes with blackberry compote in between and frost the top and sides with buttercream.
  10. Decorate with chocolate skulls and fresh blackberries.
