  • 1 small Spaghetti Squash (about 30 ounces)
  • 1 small Zucchini, diced
  • ½ Bell Pepper, diced
  • ¼ Red Onion, diced
  • ¾ cup cooked Black Beans
  • ½ cup Corn Kernels
  • ½ cup Salsa
  • 2 ounces Cheese, shredded

Instructions

  1. Preheat oven to 425°F. Prepare a baking sheet.
  2. Stab spaghetti squash several times; microwave for 4-5 minutes, then slice in half and scoop out seeds.
  3. Rub squash halves with olive oil, season with salt and pepper; roast on baking sheet for 30–45 minutes until fork-tender.
  4. Scrape strands from cooled squash using a fork, leaving some flesh for structure.
  5. In a skillet over medium heat, sauté onion, zucchini, bell pepper with cumin and oregano until softened, about 8–10 minutes.
  6. Mix in black beans, corn, salsa; taste and adjust seasoning.
  7. Combine spaghetti strands and half the cheese into the skillet mixture; fill each squash half with it.
  8. Top each bowl with remaining cheese; bake at 350°F for about 10 minutes.
  9. Broil for an additional minute or two until cheese is bubbly.
