  • 1 cup uncooked long-grain white rice
  • 1 cup salsa
  • 2 cups sweet potato, peeled and diced
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (4 oz) can diced green chiles
  • 1 tablespoon chili powder
  • 1 ¾ cups chicken or vegetable broth
  • 1 cup shredded cheddar cheese
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, combine uncooked rice, salsa, sweet potatoes, black beans, diced green chiles, chili powder, and broth.
  2. Cover and bring to a boil over high heat. Once boiling, reduce heat to low and simmer covered for about 15 minutes until rice is cooked and sweet potatoes are tender.
  3. Remove from heat and let rest covered for 5 minutes. Uncover and fluff with a fork.
  4. Stir in lime juice and season with salt and pepper to taste.
  5. Top with shredded cheddar cheese and cover until melted.
  6. Garnish with fresh cilantro before serving hot.
