  • 2 pounds yellow squash (sliced ¼ inch thick)
  • 1/4 cup butter
  • 1/2 cup diced onion
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • ½ cup sour cream
  • 1 large egg (beaten)
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 cup butter crackers (finely crushed)

Instructions

  1. Sauté diced onion in melted butter over medium heat until soft (7-8 minutes).
  2. Add sliced squash and cook until tender (10-12 minutes), stirring frequently.
  3. Drain excess moisture using a colander lined with a towel.
  4. In a mixing bowl, combine drained squash, onion, garlic powder, salt, black pepper, sour cream, beaten egg, cheddar cheese, and 1/4 cup Parmesan cheese.
  5. For the topping, mix melted butter with crushed crackers and remaining Parmesan.
  6. Spread the squash mixture in a baking dish and top with the cracker mixture.
