Soft-Baked Apple Cinnamon Rolls are the ultimate comfort food, perfect for breakfast or brunch gatherings.   • 250g whole milk, lukewarm
  • 50g Granulated Sugar
  • 2 1/4 tsp active dried yeast
  • 2 large eggs, at room temperature
  • 1/2 tsp kosher salt
  • 565g All-Purpose Flour
  • 100g Unsalted Butter, at room temperature
  • 850g – about four medium apples, peeled, cored, and diced small
  • 30g Unsalted Butter
  • 80g Granulated Sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp Kosher salt
  • 1 Tbsp Corn starch
  • 125g Pecan Halves
  • 190g Unsalted Butter, at room temperature
  • 280g Brown Sugar
  • 2 Tbsp plus 1 tsp ground cinnamon
  • 1/8 tsp Kosher salt
  • 115g Unsalted Butter, at room temperature
  • 225g Cream Cheese, at room temperature
  • 250g Powdered Sugar, sifted
  • 12 Tbsp Heavy Whipping Cream
  • 1/2 tsp kosher salt

Instructions

  1. In a mixing bowl, combine lukewarm milk and granulated sugar. Sprinkle yeast on top and let it sit for about 5-10 minutes until foamy.
  2. Add eggs and mix well.
  3. Gradually incorporate flour and salt into the mixture. Knead until smooth.
  4. Mix in unsalted butter until fully combined. Let rise in a warm place until doubled in size (about 1 hour).
  5. In a skillet over medium heat, melt 30g butter.
  6. Add diced apples, granulated sugar, cinnamon, kosher salt, and cornstarch. Cook until apples are tender (about 5-7 minutes). Set aside to cool.
  7. In a bowl, combine softened butter with brown sugar, cinnamon, and kosher salt until smooth.
  8. Preheat your oven to 180°C (350°F).
  9. Roll out the dough on a floured surface into a rectangle.
  10. Spread the cinnamon roll filling evenly over the dough.
  11. Distribute apple filling and pecans on top before rolling up tightly from one end.
  12. Cut into equal pieces and place in a greased baking dish.
  13. Let rolls rise again for about 30 minutes before baking for 25-30 minutes until golden brown.
  14. While baking, prepare frosting by beating cream cheese with butter until creamy; add powdered sugar gradually along with whipping cream and salt.
  15. Drizzle frosting over warm rolls once out of the oven.
