  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons curry powder
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can (13.5 oz) coconut milk

Instructions

  1. Season the beef cubes with salt and black pepper. Heat vegetable oil in a large skillet over medium-high heat and sear the beef until browned on all sides.
  2. In the same skillet, add chopped onion, minced garlic, and grated ginger; cook until onions are translucent. Stir in curry powder, garam masala, cumin, paprika, and cayenne pepper (if using) until fragrant.
  3. Transfer the seared beef and sautéed mixture into your slow cooker. Add coconut milk and any additional broth if needed.
  4. Cover and set the slow cooker on low for about 6–8 hours or high for 3–4 hours until the beef is tender.
