  • 20 oz refrigerated three cheese tortellini
  • 8 tbsp unsalted butter
  • 2 tbsp minced garlic
  • 2 cups heavy cream
  • 5 oz fresh baby spinach
  • 1/3 cup dry apple vinegar
  • 4 oz cream cheese (softened)
  • Freshly grated Parmesan cheese
  • All-purpose seasoning for shrimp
  • 1 tbsp olive or grapeseed oil
  • 1 tbsp all-purpose flour
  • 6 oz chicken stock
  • 1 tsp dried basil
  • 1/4 tsp crushed red pepper

Instructions

  1. Season the shrimp generously with all-purpose seasoning.
  2. In a large skillet, heat olive oil over medium-high heat and sear shrimp for 1-2 minutes per side until pink and opaque. Remove and set aside.
  3. Reduce heat to medium-low; deglaze skillet with apple vinegar. Add butter and garlic; cook until fragrant.
  4. Stir in flour until dissolved, then whisk in chicken stock and cream cheese until creamy. Pour in heavy cream, simmer for 5-7 minutes.
  5. Cook tortellini according to package instructions; drain.
  6. Add spinach to the sauce; stir until wilted, then mix in crushed red pepper and Parmesan until melted.
  7. Fold in cooked tortellini and shrimp gently before serving.
