  • 1 pound ground beef
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 can Rotel (10 oz)
  • 1 can pinto beans (16 oz), drained
  • 1 can black beans (15 oz), drained
  • 1 can kidney beans (16 oz), drained
  • 1 can corn kernels, drained
  • 1 oz taco seasoning
  • 1 oz ranch seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked; drain excess grease.
  2. Add diced onions and sauté for about 3-4 minutes until translucent. Then add minced garlic along with salt and pepper; cook for another minute.
  3. Stir in taco seasoning, ranch seasoning, beef broth, Rotel, pinto beans, black beans, kidney beans, and corn; mix well.
  4. Cover and simmer on medium-low heat for about 30 minutes to meld flavors together.
