  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, chopped
  • 3 medium potatoes, diced
  • 1 tbsp tomato paste
  • 4 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and black pepper to taste
  • Crusty bread bowls

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef cubes until browned on all sides; remove from pot.
  2. In the same pot, sauté onions and garlic until translucent. Add carrots, celery, and potatoes; stir for about 5 minutes.
  3. Return seared beef to the pot along with tomato paste, beef broth, thyme, rosemary, salt, and pepper. Stir to combine.
  4. Bring to a boil; reduce heat to low and cover. Simmer for about 2 hours or until beef is tender.
  5. For a thicker stew (optional), mix flour with water and stir into the stew during the last 15 minutes of cooking.
  6. Hollow out crusty bread bowls; toast lightly if desired. Ladle stew into each bowl and serve hot.
