  • 2 cups fresh cherries (washed, pitted, and halved)
  • 1 1/3 cups white granulated sugar
  • 2 large eggs
  • 5 tablespoons unsalted butter (melted)
  • 1/3 cup canola oil
  • 1 teaspoon pure vanilla extract
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper and spread halved cherries over it, sprinkling with sugar. Roast for 10 minutes until soft.
  2. Lower the oven temperature to 325°F. Prepare an 8×8-inch baking pan by spraying with non-stick spray and lining with parchment paper.
  3. In a bowl, sift together flour, cocoa powder, and salt; set aside.
  4. In another bowl, whisk sugar and eggs on high speed until fluffy. Mix in melted butter and oil.
  5. Gently fold in dry ingredients until just combined. Fold in half of the roasted cherries and chocolate chips.
  6. Pour batter into the prepared pan and bake for 40-50 minutes until edges are set but center is slightly underdone. Let cool before serving.
