  • 1 ½ cups rolled oats
  • 1 cup unsalted butter, melted
  • 2 cups pumpkin puree
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a bowl, mix flour, oats, brown sugar, baking soda, and salt. Stir in melted butter to form a crumble.
  3. Press half the crumble mixture into the bottom of the prepared dish.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla until smooth.
  5. Pour the pumpkin filling over the crumble base evenly.
  6. Sprinkle remaining crumble on top and add optional chopped walnuts if desired.
  7. Bake for 30–35 minutes or until golden brown and set in the center.
  8. Allow cooling completely before slicing into squares.
