  • 4 mini pumpkins or ramekins
  • 2 cups heavy cream
  • 1/3 cup granulated sugar (plus extra for topping)
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. If using mini pumpkins, cut off the tops and scoop out the seeds; if using ramekins, place them on a baking tray.
  3. In one bowl, whisk together egg yolks and granulated sugar until smooth. In another bowl, combine heavy cream, vanilla extract, pumpkin puree, cinnamon, ginger, and salt until well mixed.
  4. Gradually add the cream mixture to the egg mixture while whisking continuously to avoid curdling.
  5. Pour the custard into your mini pumpkins or ramekins until three-quarters full.
  6. Place filled containers in a baking dish and fill with hot water halfway up the sides. Bake for about 30 minutes until set but still slightly jiggly.
  7. Chill in the refrigerator for at least 2 hours before serving.
  8. Just before serving, sprinkle sugar on top and caramelize with a kitchen torch or under a broiler.
