  • 2 cups granulated sugar
  • 3/4 cup water
  • 1/2 cup liquid glucose or light corn syrup
  • A few drops of black gel food coloring
  • 6 Granny Smith apples (or 12 small apples)

Instructions

  1. Prepare your surface by greasing a piece of baking paper on a tray.
  2. Skewer each apple with bamboo skewers and set aside.
  3. In a saucepan over medium heat, combine sugar, water, corn syrup, and black food coloring until sugar is dissolved. Stop stirring and wash down the sides of the pot to prevent crystallization.
  4. Cook until the mixture reaches hard crack stage (150ºC/310ºF).
  5. Dip each skewer apple into the caramel mixture until fully coated.
  6. Place dipped apples on the prepared baking sheet to cool and harden.
