  • 250g chicken breast fillet
  • 1 red capsicum
  • 1 green capsicum
  • 1 medium onion
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp crushed chili flakes
  • 1 cup basmati rice
  • 2 cups water
  • A pinch of salt
  • 1 tsp ground black pepper
  • 1 tsp minced garlic
  • 1 tbsp cooking oil (vegetable or sesame)

Instructions

  1. Rinse the basmati rice under cold water until clear. In a pot, combine rice, 2 cups water, and a pinch of salt. Bring to boil, then cover and simmer for 10-12 minutes until fluffy.
  2. Heat oil in a wok over medium-high heat. Add minced garlic; fry briefly until fragrant.
  3. Add diced chicken to the wok; cook for about 5-7 minutes until golden brown.
  4. Incorporate chopped onion and both capsicums; stir-fry for another 3-4 minutes until crisp.
  5. Pour in soy sauce, oyster sauce, chili flakes, and black pepper. Toss until evenly coated.
  6. Serve hot alongside the fluffy rice.
