  • 15.25 ounces vanilla cake mix
  • 3 large eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 1 tablespoon orange zest
  • 3.4 ounces orange JELLO
  • 1 ¼ cup boiling water
  • ⅓ cup fresh squeezed orange juice
  • 15 ounces mandarin oranges
  • 3.5 ounces vanilla instant pudding mix
  • 8 ounces Cool Whip

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine the cake mix, eggs, milk, and oil. Mix on medium speed for 2 minutes; fold in orange zest.
  3. Pour batter into a greased 9×13 inch baking pan and bake for about 28 minutes or until a toothpick comes out clean.
  4. Dissolve JELLO in boiling water; stir in orange juice.
  5. Poke holes in the warm cake and pour JELLO mixture over it.
  6. Refrigerate for at least 2 hours.
  7. Combine pudding mix with Cool Whip and spread over chilled cake.
  8. Top with mandarin oranges before serving.
