  • 1 lb ground beef
  • 1/2 cup diced onion
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup milk
  • 2 cups uncooked macaroni
  • 2 cups shredded cheddar cheese
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk for cheese sauce
  • 1/2 tsp salt for cheese sauce
  • 1/4 tsp pepper for cheese sauce
  • 1/2 tsp paprika
  • 1/2 tsp dry mustard

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix ground beef, onion, breadcrumbs, egg, milk, salt, and pepper until combined. Press into a greased 9×13 baking dish.
  3. Bake for 20 minutes until partially cooked.
  4. Cook macaroni according to package directions; drain.
  5. In a saucepan, melt butter over medium heat. Stir in flour, cook for one minute, then whisk in milk until thickened. Add seasonings and stir in 1.5 cups of cheese until melted.
  6. Mix cooked macaroni with cheese sauce and pour over the meatloaf layer. Top with remaining cheese.
  7. Bake uncovered for an additional 25 minutes or until bubbly.
