  • 200 grams ground beef
  • 400 grams lean ground beef
  • 1 large egg
  • 100 grams crustless bread
  • 125 ml white grape juice
  • 100 grams onion (minced)
  • 4 garlic cloves (minced)
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 cups hot water or stock
  • 810 tablespoons lemon juice
  • olive oil
  • ½ teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 teaspoons dried parsley (or fresh minced)
  • 1 teaspoon fine sea salt
  • ½ teaspoon ground pepper

Instructions

  1. In a mixing bowl, combine ground beef, egg, soaked crustless bread, white grape juice, onion, garlic, cumin, oregano, parsley, salt, and pepper. Mix until well combined.
  2. Shape the mixture into small balls (about 1 inch in diameter) and place on a baking sheet.
  3. Heat olive oil in a frying pan over medium heat and brown the meatballs on all sides. Remove from heat.
  4. In the same pan, melt butter and stir in flour to create a roux. Gradually add hot water or stock while whisking to avoid lumps.
  5. Stir in lemon juice and season to taste with salt and pepper.
  6. Gently add cooked meatballs to the sauce and simmer on low heat for about 10 minutes.
