  • 1 (16 ounce) package gnocchi (optional)
  • Olive or avocado oil
  • 2 links spicy Italian chicken sausage, crumbled
  • 2 leeks, sliced
  • 1 fennel bulb, sliced
  • 1 large parsnip, diced
  • 1 medium carrot, diced
  • 1 rib celery, diced
  • 4 cloves garlic, pressed
  • 1 (28 ounce) can whole tomatoes, chopped
  • 1 (15 ounce) can navy beans, drained and rinsed
  • 6 cups chicken stock/broth
  • 1 cup chopped kale
  • Juice of 1 lemon

Instructions

  1. Prepare the gnocchi according to package instructions and set aside.
  2. In a large soup pot over medium-high heat, add oil and crumble in the spicy sausage. Brown until cooked through.
  3. Add sliced leeks, fennel, parsnip, carrot, and celery to the pot; season with salt, pepper, and Italian seasoning. Sauté until vegetables are tender.
  4. Stir in the pressed garlic until fragrant. Add chopped tomatoes and navy beans; pour in chicken stock/broth and mix well.
  5. Cover and simmer for about 20 minutes until all veggies are tender. Stir in kale and lemon juice before serving.
  6. Serve hot over a small amount of cooked gnocchi in each bowl.
