  • 1 cup Onion, diced
  • 1 tablespoon minced garlic
  • 12 Jalapeno Peppers, diced
  • 1 teaspoon Chipotle Chili Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Black pepper
  • 2 cups Red Salsa
  • 1 (10-ounce) can Enchilada Sauce
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can corn, drained
  • 2 boxes Jiffy cornbread Mix
  • 2 Eggs
  • 2/3 cup Milk
  • Sour Cream
  • Chopped Tomatoes or pico de gallo
  • Cilantro
  • Guacamole

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, brown 1 pound of ground beef over medium heat and drain excess fat.
  3. Add diced onion, minced garlic, and jalapenos; cook until softened (3–4 minutes).
  4. Stir in spices: chipotle chili powder, paprika, salt, cumin, and black pepper.
  5. Mix in red salsa and enchilada sauce; let simmer for 5 minutes.
  6. Incorporate black beans and corn into the filling mixture.
  7. Transfer filling to a baking dish.
  8. In a mixing bowl, combine Jiffy cornbread mix with 2 eggs and 2/3 cup milk; pour over the filling.
  9. Bake for 25–30 minutes until the cornbread is golden brown.
  10. Garnish with sour cream, chopped tomatoes or pico de gallo, cilantro, and guacamole before serving.
