  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Sear the chicken in a skillet over medium heat for 3–4 minutes on each side until golden brown; remove and set aside.
  3. In a bowl, mix BBQ sauce, honey, soy sauce (if using), and minced garlic.
  4. Toast uncooked rice in the same skillet for 1–2 minutes while stirring frequently.
  5. Add chicken broth and half of the BBQ mixture to the skillet; stir well.
  6. Return the chicken to the skillet; pour remaining sauce over it. Cover and simmer on low heat for about 15 minutes.
  7. If using vegetables, add them now; cover and cook an additional 5 minutes until rice is tender.
  8. Allow to sit for 5 minutes before garnishing with chopped green onions and serving warm.
