  • 3 tablespoons sugar
  • 1 ½ tablespoons cornstarch
  • 1 package of pre-made pie crust (2 in a pack)
  • 1 egg (for egg wash)
  • Powdered sugar (for drizzle)

Instructions

  1. Cook blueberries in a medium saucepan over medium heat until soft, about 9 minutes.
  2. Mix sugar, cornstarch, and a pinch of salt; add to blueberries and stir for 2-3 minutes until thickened.
  3. Add lemon juice and let the filling cool slightly.
  4. Preheat oven to 425°F (220°C) and prepare baking sheets with parchment paper.
  5. Roll out the pie crust and cut into circles using a circle cutter (about 3 ½ inches).
  6. Assemble by placing filling on half of the dough circles and topping them with remaining circles; crimp edges to seal.
  7. Brush tops with an egg wash and bake for about 20 minutes or until golden brown.
  8. Drizzle with icing made from powdered sugar and milk once cooled.
