  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips
  • 1 cup chocolate chips for topping
  • 1 tsp coconut oil for topping
  • Flaky sea salt, optional

Instructions

  1. In a mixing bowl, combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt until well mixed. Stir in chocolate chips.
  2. Transfer the mixture to parchment paper on a flat surface and press it into an even layer about 1/2 inch thick.
  3. Melt the chocolate chips and coconut oil together in a microwave-safe bowl in short intervals until smooth.
  4. Pour the melted chocolate over the cookie dough layer and spread evenly. Optionally sprinkle flaky sea salt on top.
  5. Chill in the freezer for about 10 minutes to set before cutting into chunks.
