  • 1 3/4 lb boneless skinless chicken breast, cubed
  • 3 cups fresh pineapple, cubed
  • 1 1/2 large green peppers, diced
  • 1 large red onion, diced
  • 1/3 cup ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup canned pineapple juice
  • 4 Tbsp olive oil (divided, plus more for brushing grill)
  • 1 1/2 Tbsp rice vinegar
  • 4 garlic cloves (minced)
  • 1 Tbsp minced ginger
  • 1/2 tsp sesame oil
  • Salt and freshly ground black pepper

Instructions

  1. In a mixing bowl, whisk together marinade ingredients until well combined.
  2. Place cubed chicken in a resealable bag; reserve half cup of marinade. Pour remaining marinade over chicken and refrigerate for at least one hour.
  3. Preheat grill to medium heat (400°F). Drizzle olive oil over vegetables and season with salt and pepper.
  4. Assemble skewers by threading chicken, pineapple, onions, and peppers alternately.
  5. Grill skewers for about 10 minutes total, brushing with reserved marinade halfway through. Cook until chicken reaches 165°F.
  6. Serve warm and enjoy!
