  • 2 boneless, skinless chicken breasts
  • 3 medium potatoes
  • 2 cups fresh lettuce leaves
  • 1 cup cherry tomatoes
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp dried Italian herbs (or mix of thyme, oregano, basil)
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • 1 tbsp lemon juice
  • 2 tbsp butter
  • 1 cup milk (or cream for extra richness)
  • Optional: fresh thyme for garnish

Instructions

  1. In a bowl, mix olive oil, minced garlic, dried herbs, smoked paprika, salt, pepper, and lemon juice. Rub onto the chicken and let marinate for at least 15 minutes.
  2. Boil cubed potatoes in salted water until fork-tender (12-15 minutes). Drain and mash with butter and milk until creamy. Season to taste.
  3. Preheat grill pan or outdoor grill over medium-high heat. Grill chicken for 5-6 minutes per side until cooked (internal temperature should reach 165°F).
  4. Combine chopped lettuce and tomatoes in a bowl. Drizzle with olive oil and lemon juice; season with salt and pepper before tossing.
  5. Plate sliced grilled chicken alongside mashed potatoes and fresh salad.
