  • 2 cups plain white flour

  • 1 cup milk (2%, whole, or nonfat)
  • 1 tbsp white or apple cider vinegar
  • 1 large egg
  • 3 tbsp unsalted butter, melted
  • 1 1/2 cups sharp cheddar cheese, grated
  • 2 chopped green onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini and cheddar cheese; finely chop the green onions.
  3. In one bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  4. In another bowl with zucchini, mix in milk, vinegar, egg, and melted butter until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in cheese and green onions.
  6. Pour batter into a greased loaf pan; spread evenly.
  7. Bake for about 60 minutes until golden brown.
