  • 240ml low-sodium chicken broth
  • 5g salt (plus more to taste)
  • 42g unsalted butter
  • 5g fresh thyme (chopped)
  • Black pepper (to taste)

Instructions

  1. Bring the chicken broth and salt to a boil in a wide pot.
  2. Add the cauliflower florets and reduce heat to low. Cover and steam for about 20 minutes until fork-tender.
  3. Transfer the steamed cauliflower to a food processor using a slotted spoon.
  4. In the same pot, whisk cubed butter into about 3 tablespoons of hot broth until smooth.
  5. Pour the butter mixture into the food processor with the cauliflower. Add chopped thyme and black pepper.
  6. Blend until completely smooth, adjusting texture with more warm broth if needed.
  7. Serve warm as a side dish.
