  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons canola oil
  • Zest and juice of 1 large lime
  • 1 tablespoon chili powder
  • 1 ½ teaspoons ground cumin
  • 1 clove garlic, chopped
  • 1 jalapeno, chopped (seeds removed if sensitive to spice)
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 large red onion

Instructions

  1. Cut chicken into bite-sized pieces and place in a zip-top bag.
  2. In a bowl, mix canola oil, lime juice and zest, chili powder, cumin, garlic, jalapeno, and salt to create the marinade.
  3. Pour the marinade over the chicken in the bag; seal and refrigerate for at least 30 minutes or overnight.
  4. Preheat grill to medium-high heat.
  5. Cut bell peppers and onion into chunks; alternate threading them onto skewers with marinated chicken pieces.
  6. Grill kebabs for about 6 to 8 minutes until the chicken is cooked through, turning occasionally.
