  • 1 lb fresh chow mein noodles
  • 2 cups thinly sliced cabbage
  • 1 cup sliced celery
  • 1 small sliced onion
  • 2 tbsp vegetable oil
  • 2 tbsp regular soy sauce
  • 1/2 tbsp dark soy sauce
  • 2 tbsp vegetarian stir fry sauce
  • 1 tbsp sesame oil
  • 2 garlic cloves, minced
  • 1/4 cup chicken stock
  • 1/2 tbsp cornstarch

Instructions

  1. In a small bowl, mix together the soy sauce, vegetable oil, garlic, chicken stock, and cornstarch; set aside.
  2. Bring a large pan of water to boil and blanch the chow mein noodles for 20-30 seconds until loosened; strain and set aside.
  3. Heat 1 tablespoon of vegetable oil in the pan over medium-high heat; sauté the onions, cabbage, and celery until softened (about 1 minute).
  4. Push vegetables aside in the pan; add remaining oil and noodles along with the prepared sauce.
  5. Toss everything together until noodles are evenly coated in sauce; serve hot.
