  • 2 pounds peeled and deveined shrimp
  • 1 English cucumber, diced
  • 3 green onions, sliced
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • Zest and juice of 1 lime
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, minced
  • ¼ teaspoon kosher salt

Instructions

  1. In a bowl, combine mayonnaise, sour cream, lime zest and juice, dill, Dijon mustard, garlic, and salt. Mix until smooth.
  2. Bring a large pot of water to boil. Add shrimp and cook for 2-3 minutes until pink.
  3. Prepare an ice bath while shrimp cook. Transfer cooked shrimp to the ice bath for 3 minutes.
  4. Chop cooled shrimp into bite-sized pieces, then mix with cucumber, green onions, and dressing in a bowl until well coated.
