  • 3 lbs boneless, skinless chicken thighs
  • 1 cup light brown sugar
  • 1 cup soy sauce
  • ⅓ cup bourbon whiskey
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon ground ginger
  • 1 tablespoon honey
  • ½ teaspoon red pepper flakes
  • 4 cloves garlic, minced
  • Cornstarch and water for thickening
  • Chopped green onions for garnish

Instructions

  1. Place chicken thighs in the bottom of a slow cooker.
  2. In a mixing bowl, whisk together brown sugar, soy sauce, bourbon, apple cider vinegar, ground ginger, honey, red pepper flakes, and minced garlic. Pour over the chicken.
  3. Cover and cook on high for 4 hours or low for 6 hours until chicken is tender.
  4. Remove chicken, shred or chop it, then return to the slow cooker.
  5. Mix cornstarch with water to form a slurry and stir into the sauce. Cook an additional 5–10 minutes until thickened.
  6. Garnish with chopped green onions before serving.
