  • 1 ½ tablespoons minced garlic

  • 1 teaspoon black pepper
  • Fresh herbs (basil, oregano, mint)
  • 1 cup heavy cream
  • ¾ cup grated Romano cheese

Instructions

  1. Cook the pasta according to package directions, reserving one cup of pasta water.
  2. Shred the zucchini after removing seeds and ends.
  3. In a skillet, heat olive oil over medium-high heat; sauté onions until translucent.
  4. Add garlic and red pepper flakes; cook for one minute.
  5. Stir in zucchini, seasonings, and half the herbs; cover and cook for 15 minutes on low heat.
  6. Mix in heavy cream and remaining herbs; stir until warmed through.
  7. Incorporate Romano cheese gradually; adjust thickness with reserved pasta water as needed.
