  • 10 oz rotini pasta

  • 4 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • Salt and black pepper to taste

  1. Cook rotini pasta in a large pot of salted boiling water until al dente; drain and reserve some pasta water.
  2. Season chicken pieces with Cajun seasoning, salt, and pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown; set aside.
