  • 4 ounces softened brick-style cream cheese (lite is okay)
  • 1/4 cup granulated sugar (for filling)
  • 3 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat your oven to 350°F and prepare a 9×5-inch loaf pan.
  2. In a large bowl, combine the egg, pumpkin puree, sugars, coconut oil, sour cream, vanilla extract, and spices until smooth.
  3. Gently fold in the flour, baking powder, baking soda, and salt until just mixed; avoid overmixing.
  4. Pour two-thirds of the batter into the prepared pan.
  5. In another bowl, mix cream cheese with additional sugar and flour until smooth; spread over the batter in the pan.
  6. Top with the remaining batter and smooth out gently.
  7. Bake for approximately 48 minutes or until golden brown; check doneness with a toothpick.
