  • 5 eggs
  • 1/2 cup powdered sugar
  • 8 oz mascarpone
  • 1/2 cup coconut cream
  • 1 cup heavy cream
  • 14 oz sweetened condensed milk
  • 13.5 oz coconut milk
  • 24 ladyfingers
  • 1/2 cup vanilla extract (alcohol-free)
  • 2 cups coconut flakes
  • 1 tsp cinnamon

Instructions

  1. In a large bowl, separate egg yolks from whites. Whisk yolks with powdered sugar until pale.
  2. Blend mascarpone, coconut cream, and half the coconut milk into the egg mixture until smooth.
  3. In another bowl, whip heavy cream with remaining powdered sugar until stiff peaks form.
  4. Gently fold whipped cream into the mascarpone mixture and refrigerate.
  5. Combine remaining condensed milk, evaporated milk, coconut milk, vanilla extract, and cinnamon in a bowl for dipping.
  6. Quickly dip ladyfingers in the mixture and layer them at the bottom of your serving dish.
  7. Spread half of the cream mixture over ladyfingers and sprinkle with coconut flakes.
  8. Repeat layers with remaining ingredients and refrigerate for at least 12 hours before serving.
