  • 1 teaspoon vanilla extract

  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • Cinnamon sugar for swirling

Instructions

  1. Preheat the oven to 350F (175C). Grease mini loaf pans and line them with parchment paper.
  2. In a medium bowl, whisk together the egg, granulated sugar, brown sugar, pumpkin, oil, and vanilla until smooth.
  3. Sift the flour, baking powder, baking soda, pumpkin pie spice, and salt into the wet mixture. Stir until just combined; do not overmix.
  4. Divide the batter into the prepared pans and sprinkle with cinnamon sugar. Use a toothpick to swirl it gently into the top layer.
  5. Bake for 28 to 30 minutes or until a toothpick comes out clean. Cool in the pan for about 10 minutes before transferring to a wire rack.
