  • 1 1/2 cups Cake Flour
  • 2 tsp corn starch
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup cold unsalted butter, cubed
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup packed brown sugar
  • 6 Tbsp softened butter
  • 2 Tbsp cinnamon
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 400°F and prepare baking sheets with parchment paper.
  2. In a small bowl, mix brown sugar, softened butter, and cinnamon for the filling; set aside.
  3. In a large bowl, combine all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
  4. Using a stand mixer, cream cubed cold butter until smooth; add granulated sugar and blend.
  5. Incorporate eggs and vanilla extract into the mixture until fully combined.
  6. Gradually mix in dry ingredients until incorporated into the dough.
  7. On a clean surface, shape dough into a rectangle and spread the cinnamon mixture evenly over it.
