  • 1/2 cup Dutch process cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 2 large eggs
  • 1/4 cup unsalted butter (melted)
  • 1/4 cup canola oil
  • 3/4 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups shredded zucchini
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and grease a 9-by-5-inch loaf pan.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and sea salt.
  3. In a large bowl, mix eggs, melted butter, oil, vanilla extract, and brown sugar until smooth.
  4. Gradually fold dry ingredients into the wet mixture until just combined. Gently stir in shredded zucchini and 3/4 cup of chocolate chips.
  5. Pour batter into the prepared pan and sprinkle remaining chocolate chips on top.
  6. Bake for 50-60 minutes until a toothpick inserted into the center comes out mostly clean.
  7. Cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
