  • 1 medium zucchini
  • 3 garlic cloves
  • Light soy sauce
  • Sesame oil
  • Oyster sauce
  • 1 teaspoon cornstarch
  • 2 teaspoons sugar (or honey)
  • 1 tablespoon rice apple vinegar (optional)
  • 1 tablespoon cooking oil
  • Ground black pepper (optional)

Instructions

  1. Cut chicken into bite-sized pieces and marinate with cornstarch, soy sauce, sesame oil, sugar (or honey), and optional rice vinegar for at least 30 minutes.
  2. Heat oil in a wok over medium-high heat and sauté smashed garlic until fragrant.
  3. Add marinated chicken along with marinade; cook until no longer translucent (about 2 minutes).
  4. Remove chicken from pan; add sliced zucchini to the same pan and stir-fry for about 5 minutes until tender.
  5. Return chicken to the pan, add oyster sauce, and mix well for another 2-3 minutes until heated through.
  6. Serve immediately over rice or noodles.
