  • 2½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1¾ cups granulated sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup whole milk (or buttermilk)
  • 2 cups cherries (fresh, frozen, or canned), pitted and chopped
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3½ cups powdered sugar
  • ¼ cup cherry juice or puréed cherries (optional for flavor and color)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. Using an electric mixer, cream butter and sugar until light and fluffy. Beat in eggs one at a time and mix in vanilla.
  4. Alternately add dry ingredients and milk to the butter mixture, mixing until just combined.
  5. Divide batter among prepared pans and bake for 22–27 minutes until a toothpick comes out clean. Cool completely on wire racks.
  6. For the filling, simmer chopped cherries with sugar and lemon juice until thickened; cool before using.
  7. For the frosting, beat cream cheese until smooth, then mix in butter and powdered sugar gradually. Add cherry juice for flavor if desired.
  8. Assemble the cake by layering frosting and cherry filling between cooled cake layers; frost the top and sides.
